It’s made with a lemongrass-ginger pesto base and topped with mozzarella, marinated beef, fried garlic, onion and watercress. He also serves one that honors his Cambodian heritage, dubbed the Angkor Pizza. There’s also a Korean pizza as well made with a gochujang (Korean chili sauce) marinara, mozzarella, bulgogi beef, kimchi, corn and scallions. “Those are a lot of flavors that are traditional in a Filipino breakfast,” he said. It’s made with a white garlic sauce, mozzarella, longanisa sausage, onion and an egg sunny side up. Yim, a father of three whose kids are half-Filipino, wanted to pay homage to that culture as well with his Filipino pizza. I feel like it gets the balance of sweet and savory,” he said. “I really wanted to do a take on what I grew up eating…it has this very savory (flavor) with a little hint of chocolatey-sweet. Instead of tomato sauce, Yim covers this pizza with mole before adding cotija cheese, caramelized onions, chicken, mushrooms and cilantro to the pie. He’s implementing that philosophy with pizza offerings like the Mexican Pizza. The first generation Cambodian-American is a Le Cordon Bleu graduate who soft-opened his first restaurant on Dec.1 after stints in the high-end kitchens of respected Long Beach spots such as Sir Winston’s at the Queen Mary, James Republic and Mar’Sel at Terranea Resort in Rancho Palos Verdes. I don’t want to be that run of the mill traditional pepperoni and sausage that you can find up and down the street,” said Long Beach native Maurice Yim, the PowWow chef and owner who looks far younger than his 40 years of age and is far from your typical pizza maker. “The philosophy here is to be creative with the pizza. The toppings include bulgogi and eggs to create pies that are pretty much international plates on hot pizza dough served in a pink cardboard box. Instead, the restaurant often forgoes basic pizza staples, even the tomato-based sauce, for options such as mole or lemongrass-ginger pesto. It’s also possible that the film was Somebody Up There Likes Me, a 1956 movie where Paul Newman is threatened with the “30 days in the hole.PowWow Pizza offers staples such as pepperoni, Margherita and cheese pies, but that’s pretty much it for the standard options on the menu at the recently opened Bixby Knolls spot. ![]() ![]() Marriott may have been referring to the 1938 movie Angels With Dirty Faces, although that line is never uttered in the film. Marriott has said that inspiration for the title came from a Humphrey Bogart/James Cagney movie he saw on TV, where Bogart plays a prisoner who gets sent to “30 days in the hole.” In many ways, the song is a call for legalization. Marriott was making the point that drugs were a part of the culture (just as alcohol was a generation earlier) and there was nothing wrong with it. He was also thinking about a friend of the band’s who had been sent to jail for having a joint. Marriott got the idea after playing a show in Kentucky, where he learned that getting caught with drugs earned you 30 days in jail. Written by Humble Pie lead singer Steve Marriott, this song is about getting busted for drugs and getting sent to jail. Steve had left the Small Faces and started Humble Pie with Peter Frampton. This song never charted but did get some FM play. They were a successful touring band but never really broke big. At one point they had Peter Frampton and Steve Marriott in the band together but never had the song that put them over the hump. The group was never as big as it could have been. This is personally my favorite song by Humble Pie. ![]()
